Philosophy of Food: Fred Food


I come from a long line of good cooks. Both of my Grandmothers, my Great Grandfather, my Uncle Krebs and of course, my Mom were good cooks. My Dad’s Mom (whom I never knew) was known for her baking. Pies especially. My Grandmother, Ernie, was a good home cook. To this day we all miss her roast chicken. Sure we can all roast a chicken. Her touch was magic that I cannot even describe.

It is that magic touch to the every day meal that embodies Fred Food. Named for my Dad, Fred Food is uncomplicated and approachable food. It celebrates fresh wholesome ingredients. I have developed some tricks of the trade for adding that magic touch. I suspect Ernie’s magic was from the heart but I am striving for a close second.
